This knife is terrific. It cuts through meat and veggies with equal ease, and is large enough to handle even tough jobs like squash and celeriac. A note on TableTools.com -- I ordered this and was charged $14.25 for shipping and handling. This may be reasonable but you may also want to shop around first before buying.

A friend of my girlfriend came over to cook dinner with us one night and brought her Global knife. After using it to cut vegetables and meat we were very impressed. It is perfectly balanced and very lightweight. The blade is super sharp so the carrots don't go flying off the cutting board while you're chopping them. My girlfriend especially liked the knife so I went on the Amazon and bought her one. Although I have never owned a quality knife before, so I cannot compare, I am very happy with this knife and would like to collect the entire set.

This is our 4th Global knife and the first one bought this century. The others have slightly dulled in appearance and are no longer as sharp as the new one, but this due to using western sharpeners for the last 10 years or so. I have also purchased the mino sharp sharpener specifically for Global and Japenese knives and the old blades are almost back to their initial sharpness. This knife is very sharp and is excellent at slicing thru most things. It is light and not to be used for chopping where a heavier blade may be more suitable. As far as sharpness goes, none of the European blades (sabatier, Wusthof, etc) seem to be as sharp.

I highly recommed this knife. It has just the right "feel" to it. I have other expensive Henkles knifes, and will be replacing them as they wear out with Global.

Until 2 years ago, I used German knives, but even though I steeled with every use, they seemed to dull too quickly. When introduced to the Global line, the first thing that struck me was how well they held a razor sharp edge. Add to that excellent balance and outstanding design and you have top stock!I've 8 in my collection now and my previous work horse 10" chefs knife has been relegated to cutting pizza! The only other piece that rates a bit higher is my KASUMI DAMASCUS Japanese SANTOKU Chefs Knife... that is my all time favorite piece. In summary, this global vegetable knife serves us well everyday. It is simply a pleasure to use, doing its job well while never stressing your grip.
