Global knives have very thin, stiff blades. They also have comfortable grips that never slip in your hand and give you the proper leverage for each job. They are precisely balanced. Although they are expensive, you will never replace such durable knives. This knife is superb for fine to medium jobs, and works well even as a paring knife because it is so agile in your hand.Customer Review: Tomato killer

I was looking for an "offset serrated knife" as mentioned by Bourdain, and this fits the bill. Outstanding veggie slicer and all-around food prep instrument. Even over-ripe tomatoes, the kind with a still tough skin and insides soft as pudding, are no match for it. Besides the small and handy size, the handle design means that the blade meets the cutting board before your knuckles. When it finally begins to dull, several swipes on a good steel will bring the edge back to rights.Customer Review: perfect size

This knife is amazingly sharp although you do have to take care of it to maintain the edge. Wipe it off after each use, don't put it in the dishwasher, and sharpen it with a wetstone periodically and you'll enjoy a lifetime of use from this amazing knife. In addition to being razor sharp it's lightweight, ergonomic, and a pleasure to use. It's a little expensive but worth the money and much better than other knives we have of the same price. This is our second Global, we also love the large Global Chef's knife but it's nice to have a smaller one too for other applications.
