I've only used henkels and a wusthoff (sp?) before this. This is a fine knife. What I like about it is that the blade is thin and the whole knife is quite light. This is for people who use knives A LOT. This knife is essentially a large scalpel. It makes cooking a joy. It melts through most foods. The only thing to give it trouble was an overripe tomato, and it still sliced through it; only I had to actually use a slight amount of force for once. The rest of the time I just slid the knife forward and let the blade do its job. My girlfriend commented that it must be getting slightly duller and she washed it without cutting herself for the first time the other day. But then my honing steel is in the mail. I doubt after a few swipes over the steel anyone's fingers will be safe again. This thing is like a surgical instrument. My friends all admire it and ask how much it costs. Between this and the ceramic honing steel, I doubt I'll have to buy too many more knives for the rest of my life. Buy quality and only buy once. This thing? Its quality.
